Presentation
In the heart of the Languedoc, in Causses-et-Veyran on the heights of Saint-Chinian, Domaine Fonsalade embodies an elegant and contemporary expression of its terroir. Backed by a long-standing history, with records of wines marketed under this name as early as 1839, the estate has gained renewed momentum since its acquisition by the Barbe family in 2014.
Across 32 hectares, the vineyards flourish on a mosaic of schist, clay-limestone, gypsum marl and rolled pebbles, bringing richness, freshness and structure to the wines.
Fonsalade stands out for its characterful wines, both generous, precise and refined, combining the authenticity of the Languedoc with a true commitment to quality. Carefully crafted cuvées, approachable yet layered with depth, whose signature is as compelling for its sense of place as for its elegance.
Location
The Saint Chinian Pech de l’Homme 2024 from Domaine Fonsalade comes from parcels located in the heart of the Saint Chinian appellation, in a typical Languedoc landscape of hills, garrigue and Mediterranean influences. The vineyards benefit from varied exposures, allowing optimal ripening while maintaining freshness. The climate, with generous sunshine and regular winds, ensures healthy grapes. This setting produces wines that are ripe, expressive and well balanced.
Terroir
The soils are composed of a mix of clay, limestone and schist depending on the parcels. This diversity brings complexity and richness to the wine. Schist enhances concentration and aromatic intensity, while limestone brings freshness and lift. Clay contributes structure and roundness. This terroir produces wines that are generous, balanced and well structured. It fully expresses the warm character of Saint Chinian.
In the vineyard
Domaine Fonsalade manages its vineyards with careful attention to natural balance and grape quality. Vineyard work aims to preserve biodiversity and soil life. Practices are adapted to each vintage, with controlled yields. This approach ensures healthy and concentrated grapes. It reflects a commitment to producing authentic wines that respect both their environment and terroir.
Harvest
The grapes are harvested at optimal ripeness to preserve the balance between richness, freshness and structure. The harvest is carried out with care and careful selection. The 2024 vintage offers ripe, generous and well balanced fruit. This stage is essential to ensure the quality and precision of the wine. It preserves the full expression of both fruit and terroir.
Winemaking
Vinification is carried out to preserve fruit expression and the character of southern grape varieties. Fermentation mainly takes place in tanks, helping retain freshness and aromatic intensity. Extraction is carefully managed to balance structure and drinkability.
Ageing
Ageing lasts around 10 to 12 months, refining the structure and adding complexity. It respects the wine’s identity without masking it. The result is a generous and approachable wine.

Tasting
The Saint Chinian Pech de l’Homme 2024 shows a deep colour and an expressive nose of ripe black fruits, garrigue and spices. With aeration, notes of thyme, liquorice and pepper appear. On the palate, the wine is full, warm and well structured. The tannins are smooth and rounded. The overall balance is harmonious with good aromatic intensity. The finish is long and generous.
Food pairings
This wine pairs perfectly with Mediterranean and convivial cuisine. It works well with grilled meats, stews and dishes with aromatic herbs. Its generosity also allows it to match lightly spiced dishes. Three pairing ideas include grilled lamb chops, ratatouille and a dark chocolate fondant. These dishes highlight the wine’s character and richness.
