Presentation
Created by Gérard's grandfather, Hippolyte Thomas, Domaine Gérard Thomas is located in Saint-Aubin, a winegrowing village in the south of Côte de Beaune, in the heart of the Côte des Blancs. This 12-hectare family estate is now run by Gérard Thomas and his two daughters, Anne-Sophie and Isabelle, who represent the fourth generation. The vineyard, mainly planted with Chardonnay, extends over the communes of Saint-Aubin, Meursault, Puligny-Montrachet and Chassagne-Montrachet, and produces a wide range of great white wines.

Tasting
This Saint-Aubin Blanc from Thomas Gérard faithfully reflects the minerality and tension of Chardonnay grown on the cool, limestone-rich slopes of this up-and-coming appellation. The nose is subtle and pure, with aromas of lemon zest, crisp green apple, and delicate white flowers (hawthorn, honeysuckle), enhanced by a gentle smoky hint. On the palate, the wine is marked by vibrant freshness, a linear and saline structure, and a precise, fluid texture. Oak ageing is discreet and well-integrated, supporting the wine’s framework without overshadowing its purity. The finish is clean, persistent, and refreshing, making this a sharp, gastronomic white Burgundy with ageing potential of 3 to 5 years.
Food pairings
This Saint-Aubin pairs beautifully with trout en papillote with lemon, fennel, and fresh herbs. The dish’s delicacy mirrors the wine’s mineral backbone and bright acidity.
