Terroir
The grapes come from different terroirs : the Carcassonne region and the Thau lagoon Basin. The soil is composed of clay-limestone in one area and sand and silt in the other. The climate is dry and sunny, it ensures healthy conditions for the vines.
Winemaking
The berries are directly pressed until a very clear juice is obtained by flotation. Then, it is vinified as a white wine (alcoholic fermentation in stainless steel vats at low temperatures : 15°C). Few-months ageing on fine lees.
Early bottling. No malolactic fermentation.

Tasting
Lovely typical pale pink in colour, this wine is perfectly balanced. It displays fruity scents of raspberry and grenadine as well as floral scents of rose.
Food pairings
Enjoy as an aperitif, with salads or grilled meats.
