Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont, Domaine Chantal Lescure is a family-owned estate that today cultivates 19 hectares of vineyards, stretching from the slopes of Dijon in the north down to Meursault in the south.
In 1996, following the sad passing of Chantal Lescure, her children took over the estate. Aymeric and Thibault Machard de Gramont joined forces and entrusted the technical direction to François Chaveriat. This marked a radical rethink of previous practices and the beginning of a vast transformation.
From 1997 onwards, the decision was made to abandon chemical treatments so that the soils could come back to life and the grapes fully express the quality of their terroirs. The vineyard has since been entirely cultivated under organic farming, officially certified since 2006.
At the same time, the distribution network was restructured and rebuilt. Today, the reputation of Domaine Chantal Lescure is firmly established.

Location

Les Mombies is located in Chambolle Musigny on the Côte de Nuits slopes, an area known for elegance. The hillside improves drainage and helps the vine find natural balance. Bright, moderate exposures encourage slow Pinot Noir ripening while preserving freshness and precision. Cooler nights and regular airflow keep aromatics lifted and tannins refined. The setting naturally shapes a Chambolle that favours finesse over power, with an effortlessly long finish.

Terroir

Limestone leads the profile, bringing tension, freshness and a silky mouthfeel. A touch of clay adds mid palate depth and staying power. Tannins are fine and tight grained, structured yet never heavy. Aromas suggest fresh red berries, rose and gentle spice, sometimes with a subtle stony note. The balance focuses on clarity and length, with a clean, digestible finish.

In the vineyard

Domaine Chantal Lescure is organically farmed, with careful plot by plot work that respects natural balances. Soils are kept alive to support deep rooting and vine resilience. Canopy management is adapted to each vintage to protect fruit and preserve Pinot Noir freshness. Yields are controlled to favour skin quality and aromatic purity. This precision shows in the wine’s clean fruit and fine texture.

Harvest

Harvest targets the right ripeness, keeping bright fruit and fully mature tannins. Picking decisions are guided by berry tasting, overall balance and grape health. Grapes are picked and sorted carefully to retain only healthy, even bunches. This precision delivers clean, bright juice and preserves the airy Chambolle style.

Winemaking

Vinification takes place in small 25-hectolitre truncated wooden vats. Vatting lasts 18 to 25 days, with moderate punching down.

Ageing

Ageing is carried out in a cool cellar, on the lees, for 16 to 18 months. Between 30% and 50% new oak is used. Racking is performed one month before bottling. The wines are neither fined nor filtered.

Tasting

The colour is bright ruby. The nose combines fresh red berries, rose, peony and gentle spice. On the palate, the attack is supple and precise, the texture is fine and silky, carried by freshness that stretches the wine. Tannins are delicate and well integrated, and the finish returns to fruit with a subtle mineral touch. A refined, delicious and very clear Chambolle.

Food pairings

Les Mombies suits refined, flavourful dishes with tender textures. For savoury recipes, pair it with roasted veal fillet with reduced jus and mushrooms, or roasted pigeon with beetroot and cherry, or farmhouse roast chicken with thyme. For sweet recipes, try a lightly sweetened thin raspberry tart, or vanilla and gently spiced poached pear, or a not too sweet dark chocolate and cherry dessert. Serve slightly cool to keep the fruit bright.
