Presentation
We like wines that offer the unexpected. The incredible diversity of Burgundy’s terroirs and the capacity of the Pinot Noir grape to resonate all of their variations, as a musical instrument would, are the pride of Burgundy. When one thinks of Pommard, one expects structured, powerful, concentrated wines. The “Les Frémiers” climat, which borders Volnay, lends unexpected freshness and smoothness.
Terroir
This 1.6-ha plot is located south of the village of Pommard, towards Volnay. Adjacent to the “Les Fremiets” vineyard in Volnay, it shares the same elegance and maturity. “Les Frémiers” was the property of the Maizière Abbey, a daughter house of the Cîteaux Abbey, founded in 1125 in the Saône-et-Loire department. This named vineyard owes its name to the word fremyer, which meant "firm" or "robust" in Old French.
Winemaking
The grapes were handpicked. Despite low yields, because they had achieved optimal ripeness, we were able to select the finest bunches and vinify 10% of them without destemming. Six days of cold maceration preceded fermentation, which was rapid, with a temperature peak of 32°C. The young wine was then aged for 16 months in oak barrels (40% new oak).

Tasting
Superb deep red colour. Airy, fresh nose featuring herbal scents (eucalyptus, mint, vetiver), violet and a hint of peat. Delightful fresh start to the palate that is tangy and airy, reminiscent of blue fruits. Complexity and nice acidity are complemented by flavours of morello cherry jam, sloe and violet. The finish is fresh and boasts lovely firm, spicy tannins and splendid length enhanced by a nuance of liquorice.
Food pairings
Excellent with rump steak with pepper sauce or marinated game. Also superb with creamy, mild Burgundy cheeses.
