Established in 1887, the Mothe family gradually steered the estate toward an exclusive focus on Chardonnay as early as the 1950s. Today, Jean-Louis, Thierry and Vincent Mothe carry on this legacy with precision and dedication, cultivating 55 hectares of vineyards around Fontenay-près-Chablis. Their philosophy is rooted in a deep understanding of the terroir and a commitment to expressing its mineral purity.
In their pursuit of precision, they undertook detailed parcel-by-parcel vinifications within the same climat over several years, allowing them to better grasp the nuances of each soil and tailor their approach accordingly. This meticulous work is reflected in the domaine’s bright, focused style.
Fermentations take place in temperature-controlled stainless steel tanks, preserving both the aromatic clarity of the fruit and the wine’s natural tension. On the palate, their Chablis reveal a vibrant, linear profile with notes of flint, candied lemon and the saline minerality that defines the finest Kimmeridgian terroirs.
