In 2021, Pauline took over the vineyards of her maternal grandparents, located in Saint-Romain and Auxey-Duresses, at the heart of the Côte de Beaune. Drawing on this legacy passed down with passion, she brings new life to the land with energy and precision, offering a modern and sensitive interpretation of Burgundy wines.
The estate covers a few carefully selected hectares, including old vines planted in the 1970s. Each plot is farmed organically, with a deep respect for biodiversity and soil health.
