Presentation

Located just to the west of Meursault, at a slightly higher altitude, the village of Saint-Romain produces affordable wines that express all of the characteristics of the great white wines of the Côte de Beaune, renowned for being the world’s most prized region for the production of Chardonnay. Terroir

This cuvée hails from the “En Poillange” and “La Périère” plots, located in the southern part of the appellation and facing due east, which allows the grapes to ripen well. The plots’ high altitude (between 320 and 360 metres) lends the wine considerable freshness. The marl and limestone subsoil contains some layers of clay, lending minerality to the wine.

Winemaking

The harvest is done by hand. After gentle pressing of the grapes, thorough settling is carried out to preserve the aromatic purity and unique character of this terroir. Fermentation takes place entirely in lightly toasted barrels, with 30% new fine-grained oak from the forests of Central France. This is followed by 10 months of aging, punctuated by light stirrings of the lees (bâtonnages).

Tasting

Sublime pale gold robe, radiant and luminous. The nose, both explosive and ethereal, captivates with its finesse and expressiveness, blending citrus scents with floral notes (spring flowers, narcissus). Aromas of red berries (gooseberry, fresh wild strawberry) intertwine with a spicy hint of white pepper and warm notes of white chocolate. The ensemble is highly complex and remarkably elegant. On the palate, the attack is silky and expansive, carried by vibrant tension and perfectly integrated acidity. The singular balance of Saint-Romain shines through, harmonizing generous ripeness with finely chiseled minerality. The finish, marked by notes of white peach, extends the sensation of purity and precision. A truly refined and harmonious wine.

Food pairings

Goes very well with a sea bass tartare or a lemony codfish back.
