Presentation
The Bin 707 is the perfect expression of Penfolds' style of Cabernet Sauvignon. Intensely expressive fruit, a fully completed fermentation, and maturation in new oak barrels, reflecting Penfolds' vision of blending grapes from multiple vineyards and regions. The first vintage of Bin 707 dates back to 1964. The wine was not produced from 1970 to 1975 (the grapes were used for other wines), nor in 1981, 1995, 2000, 2003, 2011, 2017, or 2020 (when the grapes did not meet the style and quality requirements of the House). Powerful and with a proven aging potential, the Bin 707 maintains a secure place among Australia's best Cabernets.
The vintage
Copilot said:
The 2024 growing season produced a clear and structured vintage for Cabernet Sauvignon across the regions of Coonawarra, Barossa Valley, and Padthaway. Winter rainfall was below average, resulting in lower soil moisture reserves and consequently naturally moderated vine vigour. Spring conditions were variable, with localized heat events during flowering affecting fruit set in the Barossa Valley, while Coonawarra and Padthaway experienced a cooler period that progressed more slowly. December rainfall across the Limestone Coast arrived at an ideal time, supporting healthy vine canopies and steady bunch development.
From January onward, the season was generally warm and dry, with limited rainfall during the ripening period. The Barossa Valley experienced several heat events in February and early March, encouraging small berries and excellent concentration. Cooler nights and a stable April enabled carefully managed harvest decisions, producing Cabernet Sauvignons with firm structure, saline notes, and remarkable clarity, perfectly suited to the Bin 707 style.

Tasting
Saturated with fruit with finesse. Different vineyards, different soils, different microclimates. But an expression centered on a single grape variety. Different." "The first impression, a texture with rather Italian accents. The second impression, the Bin 707." - Peter Gago, Chief Winemaker Penfolds.
