La Vicomté, IGP Côteaux du Salagou, Millénaire, Rouge, 2022
Location
The red that colours the shores of the lake and the Salagou valley is made up of sandstone and clay commonly known as "ruffes". These rocks are the result of slow deposition of sediment over nearly 270 million years. The presence of iron oxide, which gives the soil its red colour, gives our wines soft, silky notes.

Winemaking
The grapes are harvested when ripe. They are vinified variety by variety with long vatting periods of 2 to 3 weeks. The aim is to achieve optimum extraction without dry tannins. After malolactic fermentation, the wines are kept in concrete vats for natural clarification. The wines are blended at the last moment.
Ageing
The wine is then matured for 8 months in concrete vats. Blends are made to obtain the right profile.

Tasting
Deep purple colour. The nose is very fruity, with ripe red fruit and even a hint of amyl. Full and velvety on the palate, with hints of world pepper. Beautiful complexity.
