La Vicomté, Terres Rouges, IGP Coteaux du Salagou, Red, 2025
Location
The red that colours the shores of the lake and the Salagou valley is made up of sandstone and clay commonly known as "ruffes". These rocks are the result of slow deposition of sediment over nearly 270 million years. The presence of iron oxide, which gives the soil its red colour, gives our wines soft, silky notes.
Harvest
15th of September
Winemaking
The grapes are picked when they are fully ripe. The compounds in the skin are extracted by heat (thermovinification). This is followed by a 4-hour hot maceration to extract even more fruit. The musts are clarified before fermentation, which takes place at low temperature.
Ageing
The wine is then matured for 8 months in concrete vats. Blends are made to obtain the right profile.
