Location
The red that colors the shores of the Salagou lake and valley is made up of sandstone and clay, commonly known as "ruffes". These rocks are the result of slow deposition of sediment over nearly 270 million years. The presence of iron oxide, which gives the soil its red color, gives our wines their silky notes.
Terroir
Languedoc terroir. Harvest selected according to terroir, with moderate yields.
Harvest
15th august
Winemaking
The grapes are harvested at night. In the cellar, we carry out a short maceration to allow the aromas of the skins to pass into the must. Low-temperature fermentation preserves the most volatile aromas.
Ageing
After fermentation, these wines are aged in stainless steel tanks with their fine lees. Bottling takes place the following spring, when the wine has settled naturally.
