Le Chemin des Goësses - Biparcellaire vieilles vignes 1er Cru - Extra Brut

The Chemin des Goësses is the first vintage created by Guillaume Secondé, 6th generation of Maison Barnaut. Born from two plots, the Vignes Goësses and the Remise du Chemin de Louvois inherited from his grandfathers - the first in Chardonnay in Tours-sur-Marne, the other in mixed planting in Tauxières - this Premier Cru cuvée marks the passing of a torch, between memory and future. Limited edition of 2000 bottles.

The vintage

- Extra Brut without a vintage - Pinot Noir and Chardonnay, blend of years, perpetual cuvée since 2022 - Reserve 50% (reserve + base = double the bottling quantity).

Location

- Tours-sur-Marne is located in the Great Valley of the Marne, bordering Tauxières-Mutry and Bouzy. This hillside occupies a strategic position at the crossroads of three major Champagne wine regions: to the West the Marne Valley, to the North the Montagne de Reims, and to the East the extension of the Côte des Blancs. - Tauxières is located in the Great Montagne de Reims. The municipality connects prestigious terroirs such as Bouzy and Louvois, and is part of a transitional zone towards the villages of the Marne Valley (such as Tours-sur-Marne).

Terroir

- Tours-sur-Marne (classified as Grand Cru) is exposed to the South - Southeast, the soil is composed of clay and increasingly surfacing chalk at higher altitudes. - Tauxières (Classified as 1st Cru) presents an alternation of pure chalk bands and marl bands (clay-limestone), which creates a mosaic of micro-terroirs that can differentiate neighboring plots.

In the vineyard

- Sustainable viticulture: High Environmental Value and Sustainable Viticulture certifications in Champagne (organic fertilizers, cover crops, and other agroecological techniques) - Old vines are no longer uprooted but interplanted to preserve the genetic potential.

Harvest

- Manual harvesting
- Sorting in the vineyard if necessary
- White crates to lower the temperature of the grapes

Winemaking

- Traditional pressing, juice fractionation
- 4-hour flotation settling (limitation of impurity infusion)
- Fermentation thermoregulation at 18°C.
- Fermentation in tanks adapted to the volumes of the fractions.

Ageing

- Fine lees fermentation conservation - Stainless steel tanks to avoid external aromas - Malolactic degradation for wine development - Bottling in July when wines are mature - Tank and bottle stock rotation of about 3.5 years.
