The Domaine Jean-Luc Mouillard is located in the village of Mantryn in the heart of the vineyards. Jean-Luc comes from a family of winegrowers and he has always felt this winegrowing fibre which has enabled him to develop his business over the years. 11 hectares of vines spread over three appellations: Château-Chalon, Côtes du Jura and Étoile. His estate is built on cellars dating from the 16th century, combining history and innovation.

This yellow wine from the Château-Chalon vineyards is a unique product in the world because of its grape variety, the Savagnin, its method of vinification, its longevity and its complexity.
In the vineyard
Concerned about respecting the environment, this passionate winegrower is determined to use integrated farming methods in his various plots.
Ageing
Its transformation from white wine to yellow wine will last a minimum of six years in an airy barrels. At the end of this time the wine will have lost its initial volume and a litre of Savagnin will give an average of 62 cl of Vin Jaune. This loss is called "la part des anges" and explains the capacity (62cl) of the bottle called Clavelin.

Tasting
Frank and subtle, the nose declines spices (cinnamon, nutmeg), anise and fennel, undergrowth and mushrooms. A nice journey before discovering a structured matter, in which the walnut returns discreetly but elegantly.
Food pairings
Château Chalon is a very long-keeping wine, which can age for a century! It goes well with cheese from the Jura, but also with fish and poultry.
