Abbotts & Delaunay, AOP Languedoc Rosé, 2025
Presentation
This Languedoc Rosé reveals the elegance and finesse of carefully selected terroirs, the result of viticulture that respects biodiversity and precise winemaking that accurately reflects the true potential of the Languedoc.
Terroir
This Languedoc Rosé, made from a blend of Grenache and Syrah, draws its balance and freshness from meticulously selected terroirs for their unique character. On the foothills of the Montagne Noire, terraced vineyards deeply root themselves in very stony clay-limestone soils, bringing minerality and elegance. In the Aude region, vineyards on semi-hillsides, with poor and unproductive soils, promote depth and aromatic intensity. A blend designed to reveal all the elegance and complexity of the Languedoc terroirs.
Winemaking
The grapes are harvested early in the morning to preserve their freshness and aromatic qualities. Upon arrival at the winery, they are directly pressed in a pneumatic press, only the finest juices are preserved. After a 24-hour cold settling, the alcoholic fermentation takes place in a thermoregulated stainless steel tank at 16°C, in order to preserve the purity and aromatic precision of the wine. Aging for five months in stainless steel tanks refines the texture and brings intensity. Bottling is done in April.
Varietals

Specifications
Tasting
This Languedoc Rosé displays a pale pink hue, bright and luminous, with subtle bluish reflections. The nose, expressive and fruit-driven, opens with notes of citrus and fresh red berries (morello cherry, wild strawberry), complemented by hints of confectionery and a delicate touch of sugared almond. On the palate, the attack is round and harmonious, beautifully balancing gentle sweetness and freshness. Driven by a fine tension, it reveals depth and a refined minerality. The finish is long and precise, lingering on an elegant saline note. A rosé that is both generous, deep and refined.
Food pairings
To be enjoyed very chilled, at 8°C. Perfect as an aperitif, this Languedoc Rosé pairs delicately with an ancient tomato carpaccio, a burrata and citrus salad, or a fresh herb salmon tartare. Its freshness and aromatic brightness also enhance spring rolls or grilled fish.
