Presentation

The Bourgogne Côte d’Or appellation is a new appellation beginning with the 2017 vintage. It aims to offer all of the nobility of Burgundy’s regional appellations by using grapes that come exclusively from the finest terroirs in the Côte de Beaune and the Côte de Nuits, a philosophy the House of Edouard Delaunay fully subscribes to.

Terroir

75% of our cuvée is crafted from Pinot Noir grapes that hail from the Côte de Beaune (Puligny-Montrachet 70% and Chorey-les-Beaune 5%) while the remaining 25% come from the village of Gevrey-Chambertin in the Côte de Nuits. The plots all benefit from southeastern exposure and are located at the base of the slope where the soil is composed of clayey alluvium, silt and gravel. These terroirs, composed of scree from the parent rock found in the Grand Cru vineyards, are deep for the most part, and allow the wine to express its richness and power along with its elegant, fruity notes.

Winemaking

The grapes were handpicked and underwent thorough sorting before being completely destemmed. A short period of cold maceration allowed us to extract fruit and colour, after which cuvaison lasted for approximately fifteen days. This wine was aged partly in wooden vats (50% of the cuvée) and in oak barrels (60% new oak) for the remaining half of the cuvée. Ageing lasted nine months. Each cuvée is vinified and aged separately. Final blending is conducted just before bottling.

Tasting

Magnificent color, intense with captivating violet hues from the very first glance. A nose worthy of the great Pinot Noirs from the Côte de Nuits, opening with enchanting and intense floral aromas (rose, peony). Fresh, vibrant scents of blood orange and rhubarb mingle with a slightly tangy note of raspberry. A warm hint of mint chocolate adds depth. The palate opens with superb freshness and depth, revealing perfect ripeness. It showcases remarkable richness, elegance, and complexity. The lightly toasted tannins are balanced and provide structure, giving the wine a lovely texture and length. A truly great wine, dense yet harmonious, typical of the Côte de Nuits in its finest vintages.

Food pairings

This wine is perfect with a carpaccio of red tuna, a Bresse chicken with mushrooms or a veal chop roasted with herbs.
