Presentation

“French Cellars” is a range of wines selected by “Private Collection” for the quality of their blends and the diversity of their grape varieties. These wines are made in the south of France by two winemakers trained in Australia.

Terroir

The Merlot and Cabernet grapes come from vineyards located in Roquecourbe, a small village near Carcassonne, on the banks of the Aude, at the southern limit of Minervois. Gravelly soils with some alluvium and pebbles, Mediterranean climate.

In the vineyard

The average age of the vines is 15 - 20 years. Yields are low (40hl/ha).

Winemaking

Long maceration at controlled temperature, except for 20% of the Merlot which is vinified in carbonic maceration to extract more fruit.

Tasting

This wine has a beautiful deep red color and a velvety appearance. The nose reveals very intense aromas of dark chocolate, cherry, and blackcurrant. This wine is rich, round with ripe tannins. It is a very complex and elegant wine.

Food pairings

Serve at 16°C. It pairs perfectly with stews, meats in sauce, duck breast, cheeses and chocolate cakes.
