Presentation
Nature. In order to select grapes for their respect for the environment, more and more of our purchased grapes are sourced from organically grown vineyards. We are therefore pleased to be able to offer this Beaune Premier Cru “Les Épenotes” that is produced in complete compliance with the regulations of organic agriculture.
Terroir
Located at the bottom of the slope at the southern extremity of Beaune, below “Clos des Mouches”, the “Les Epenotes” plot lies adjacent to “Pommard-Epenots” (“Les Petits Epenots”). Because the grapes grow in the same brown soil that is composed of marls and limestone pebbles, it is not surprising that the wines from these two appellations boast the same cellaring potential although the Beaune Premier Cru Les Epenotes has a finer and silkier aspect.
Winemaking
The grapes were handpicked and meticulously sorted before being completely destemmed and gently crushed. Vinification took place under the influence of indigenous yeasts. Fermentation was punctuated by gentle daily punch-downs and a few pump-overs. Ageing lasted a total of 15 months of which 7 months was in extra finely-grained barrels (17% new oak) followed by 8 months in stainless steel vats to preserve the freshness of the fruit.

Fresh rhubarb notes and a floral hint of wild rose complete this delicate bouquet. The palate reveals beautiful length, marked by a tense, mineral finish that brings structure and elegance. A pleasing, supple Burgundy wine, truly expressive of its terroir.
