Terroir

Clay-limestone plots.
Sustainable farming and respectful vineyard practices.

Harvest

Harvested at night, in the first half of September. A plot of Grenache in a cold area, ripening slowly and late. The choice of harvesting at a low degree of alcohol meant that the very first juices from the press had to be very carefully selected to avoid any herbaceous notes.

Winemaking

Fermentation on clear juice at low temperature. Aged on fine lees to refine the smoothness on the palate.
