C’est un vin friand et souple, synonyme de partage et de convivialité s’adaptant parfaitement aux plats de viandes en sauces ou plus simplement grillées. Ses arômes en font un Châteauneuf-du-Pape accessible à beaucoup de dégustateurs, des débutants aux plus confirmés.

Notre Domaine du Vieux Lazaret est l’un des principaux domaines de l’Appellation et des plus anciens datant de 1748. Le domaine s'étend sur environ 100 ha, réparti sur les 3 terroirs typiques. Les 13 cépages sont cultivés sur nos terres.
Au début du XIX°, la Famille Quiot racheta un ancien Lazaret (hospice tenu par des religieux Lazaristes qui joua un rôle primordial pendant la peste de 1720 durant laquelle périt 1/3 de la population du village) et y établit son domaine viticole en y rattachant les parcelles possédées sur la commune. Le « Domaine du Vieux Lazaret », constitué en 3 siècles au grès des mariages, achats et partages, porte ce nom depuis 1915.

Situation
Nos parcelles sont réparties tout autour du village de Châteauneuf-du-Pape, ce qui nous permet de profiter de tous les avantages que peut offrir l'aire d'Appellation en termes de variétés climatologies, de terroirs et d'exposition. Les 13 cépages traditionnels autorisés sont présents sur le domaine. Cela nous permet des vins équilibrés, tout en finesse.
Terroir
3 grands types de sols : les sols à galets roulés, les terrasses caillouteuses au sous sol associant sables et graviers et les sols argileux issus de la roche mère calcaire.
À la vigne
Notre métier de Vigneron, mais avant tout d'agriculteur, nous demande de nous allier à la nature et de nous y adapter. Selon les années, cela peut être plus ou moins difficile selon les conditions météorologiques. Cependant, nous devons, par nos pratiques culturales, permettre à la plante de nous donner son optimum sur la durée et de préserver nos terroirs.

Vinification traditionnelle. Eraflage total, remontages bi-quotidiens. Cuvaison : 15 à 21 jours en cuves béton. Élevage 18 mois cuves et fûts (15%).

Dégustation
Jeune : carmin profond, fruits noirs mûrs, tournant aux épices. Souplesse, persistance et ampleur aromatique.
Ce vin peut être conservé en tant que vieux millésime. Ses arômes de fruits mûrs épicés tournent alors sur des compotés touchant aux pruneaux, au réglisse et à des poivres noirs.

The still family-owned Vignobles Jérôme Quiot, currently led by Florence Quiot, is in the heart of Châteauneuf du Pape. There they own the two vineyards Domaine du Vieux Lazaret and Domaine Duclaux. (Since 1999, Domaine du Vieux Lazaret Châteauneuf-du-Pape is available in Systembolaget's regular assortment both as full and half bottles and now the wine is also available at magnumbutelj). A total of 13 (!) Grapes are included in the wine, which is dominated by Cinsault, Mourvèdre, Syrah and Grenache Noir. The grapes, which grow in three different soils - clay, sand and stone - are stripped, pressed and then fermented on cement tanks for 2-3 weeks with "pumping over" twice a day. Then the wine is stored on cement tanks and large oak barrels, so-called "Foudres", for 18 months. The color is dark and deep reddish brown. The scent is complex with spicy aromas of dark berries, cocoa and herbs. The taste is rich and nuanced, with a long, elegant aftertaste. The wine can advantageously be stored for at least 10-15 years. The name "Vieux Lazaret" originates from the 17th century. There was, then, in the village of Châteauneuf-du-Pape, a "Lazaret", that is, a monastery town run by monks (Lazarister) who received old, poor and sick people in connection with the plague ravages of the 1620s.

The palate is fruity, well-balanced and offers a good definition, a slight juicy / acidulous frame, suavity, elegance, a good freshness as well as a fine and very slightly tight grain. "Domaine de Vieux Lazaret is owned by the family Quiot, who has lived in the town of Châteauneuf du Pape for about 300 years. All the best parcels are - down to 1m depth - covered in potato-sized, round rocks that are terrible to work in. A shovel or chop does not last long in those fields. But all these round, bright stones are of great importance to the grapes. During the day, they reflect the sun's rays so that the grapes also get light from below, and at night they act like warmths that give off all the heat they have sucked in today's race. One of the secrets of the production of red Chateauneuf-du-Pape is a very long fermentation where shells and grains are in contact with the must for up to 21 days. Twice a day, the aunt is pumped over the shells to extract as many flavors, color and tannins as possible. The temperature during fermentation is kept at 30 degrees, which is checked automatically. After the fermentation, the wine is tested by the authorities. The last flavor component is derived from farm storage for several months on brand new oak barrels from central France.
All the wines are bottled on the special bottles of flax. These bottles may only be used by wine-growers in Chateauneuf-du-Pape, who tap their wines on the property. Chateauneuf-du-Pape Rouge has a deep crimson color and an aroma of mature dark berries and spices. The taste is soft and persistent with good filling.

Generous and with traditional charm from the reliable and well-established Chateau Lazaret. A compelling, slightly lactic note offers a dimension of complexity. The palate is a little less full and fleshy, in an appealing way, than the norm but exhibits good complexity and balance. Barrique notes of lavender and licorice linger on the very long finish.

Still very youthful and closed (tasted from magnum), I like the succulence and juiciness, the roasted dark fruit character and the spice here in Vieux Lazaret's 2012 Châteauneuf. Ultimately, the density and concentration are merely good, not exceptional, but this remains balanced and highly drinkable. I'd say another 2-3 years should see this fully resolve.
