Location

Plaisir d’Eulalie is typically crafted from the emblematic grape varieties of the Minervois—Syrah, Grenache Noir, and Carignan—blended to produce a red wine that is smooth, fruity, and approachable.

Terroir

This red wine is rooted in the heart of the AOP Minervois appellation, on the rolling hills of the family-owned Château Sainte Eulalie in La Livinière, Languedoc. The vineyard benefits from generous sunshine, a Mediterranean climate moderated by altitude, and clay-limestone soils rich in stones and minerals, which promote balanced ripening and lend structure and freshness to the wine.

In the vineyard

The vineyard is managed to optimize grape quality: tailored pruning, strict yield control, soil cultivation, and mechanical harvesting to ensure a healthy, uniform crop at optimal ripeness. The hillside exposure provides ideal conditions for ripening while preserving natural acidity and freshness.

Harvest

Harvesting is conducted 100% mechanically, allowing for rapid picking at peak ripeness. This limits oxidation and helps preserve the wine’s vibrant fruit aromas.

Winemaking

Vinification follows a classic approach for a fruit-driven red: short maceration (around 10 days), controlled temperatures, and gentle extraction. This technique ensures deep color and expressive aromas of red and black fruits while preserving a soft, harmonious structure.

Ageing

Ageing is carried out in concrete vats, which preserve the wine’s fruit-forward character and enhance roundness, without the influence of oak.
