Winemaking
Grapes are picked from dawn until midday. They are then destemmed and gently crushed at cool
temperatures to prevent oxidation. Following this, both the free-run and pressed juices are moved
to stainless steel vessels. Here, fermentation begins and is meticulously maintained at precise,
controlled temperatures.
