Location

Domaine Sève is located in the heart of Burgundy, in the privileged area of Solutré-Pouilly, within the Mâconnais sub-region. This historic terroir, the birthplace of Chardonnay, offers ideal conditions for cultivating this emblematic grape. The estate is situated near the Roche de Solutré, a site classified as a Grand Site de France, with spectacular views over the vineyard and the Saône Valley. This exceptional landscape contributes to the richness of the terroir, with limestone and clay-limestone soils that impart a marked minerality to the wines produced here.

Terroir

The terroir of Domaine Sève is a key element in the quality of its wines. The soils, mainly composed of limestone and clay, are ideal for precise and balanced cultivation of Chardonnay. The vineyards, mainly south-east facing, ensure perfect ripening of the grapes under the region’s continental climate. The variety of plots and the gentle vineyard slopes promote natural drainage, essential for vine health and flavor concentration. This unique combination of geographic and geological factors helps create wines that are both expressive and delicate.

In the vineyard

Vineyard work at Domaine Sève is based on sustainable viticulture practices, respecting the environment while prioritizing grape quality. The vines are carefully tended, following the natural cycles of the plant. Each year, the winemakers carry out precise winter pruning to control production and ensure high-quality harvests. In spring, unwanted shoots are removed, and vegetation is managed to focus the vine’s energy on producing ripe, balanced grapes. The estate also prioritizes biodiversity, using natural grass cover and limiting chemical treatments.

Harvest

Grapes at Domaine Sève are harvested by hand, allowing careful selection of the ripest and healthiest fruit. Handpicking ensures delicate handling and retention of only the best bunches. Harvesting typically occurs in late summer or early autumn, depending on grape maturity. The goal is to pick grapes at their peak, achieving a perfect balance between acidity and sugar. Manual harvesting also shows respect for the fruit and enables precise sorting in the vineyard, minimizing the risk of damage.

Winemaking

The Bourgogne Chardonnay Blanc is made using traditional, meticulous methods designed to preserve the purity of the fruit while developing complex aromas. After destemming, the grapes are gently pressed to extract high-quality juice. Alcoholic fermentation takes place in stainless steel tanks or oak barrels, depending on the cuvée, at controlled temperatures to maintain freshness and aromatic complexity. Minimal intervention allows the terroir’s typicity to shine, producing a wine of great purity.

Ageing

Ageing of the Bourgogne Chardonnay Blanc may occur in stainless steel to preserve freshness and vibrant fruit and floral aromas. For other cuvées, the wine is aged in oak barrels, with regular lees stirring (bâtonnage) to add texture and roundness. This ageing period lasts several months, allowing the wine to stabilize, clarify, and develop complexity. Oak ageing also introduces gentle oxidation, adding subtle aromas of brioche and hazelnut, typical of great Burgundy Chardonnays.

Serving

To fully appreciate the Bourgogne Chardonnay Blanc Domaine Sève, serve at 10–12°C. This temperature enhances aromatic complexity while preserving freshness and balance. It is recommended to let the wine breathe for a few minutes before tasting to release its full range of aromas. While it can be enjoyed young for its liveliness, this wine also has aging potential, developing more complex aromas and a smooth texture over several years.
