In the vineyard

Fully destemmed and hand sorted, pre-fermentation maceration at cold temps (6°c) for up to 4
days, and short fermentation at controlled temperature. Post-fermentation of 15 days and aging
in stainless vessels for 6 to 8 months prior to bottling in May.
