Presentation
Nuits-Saint-Georges, the village in which our head office is located, has a great deal of importance for us. The southern gateway to the great Côte de Nuits villages, Nuits-Saint-Georges produces wines that are extremely diverse. The terroirs north of the village, near Vosne-Romanée, are composed of deeper, clayey soils. They yield wines that are both generous and structured. The terroirs to the south are very stony, as testified to by the many quarries nearby. Here the wines are mineral, lively and bold. A good Nuits-Saint-Georges should integrate this duality that lends it its unique character and magnificent ageing potential.
Terroir
Nuits-Saint-Georges is an iconic appellation in Burgundy. Its wines were even prescribed for Louis XIV in 1693 as a remedy for his ailments. The grapes for this cuvée come from two parcels located to the north of the village: “Aux Allots”, opposite the Premier Cru “Aux Vignerondes” towards Vosne-Romanée, and “Aux Athées”, situated lower down on the piedmont. The argilo-calcareous soils, combining stony scree with deeper marls, bring both finesse and structure. The south-east exposure ensures optimal ripening of the grapes.
Winemaking
Our Nuits-Saint-Georges cuvée comes from a blend of two parcels vinified and aged separately. The grapes, fully destemmed, were placed in vats after careful sorting. Fermentation lasted fifteen days, punctuated by regular pump-overs and a few gentle punch-downs toward the end of vatting. The wine has been aged in oak barrels, 23 % of which are new.

Tasting
Pretty carmine red colour. The nose is intense, expressing notes of small red berries (raspberry) and spring flowers, lifted by nuances of smoke and flint. More sauvage hints of juniper berry and black tea emerge, complemented by subtle notes of sugared almond and coffee. The palate opens with an ample and energetic attack, both supple and fresh, combining a silky texture with a more angular structure. It beautifully illustrates the duality of Nuits-Saint-Georges wines, between softness and minerality. The finish lingers on nuances of tobacco and cocoa powder. A fine expression of the appellation, true to its character.
Food pairings
Ideal with a veal chop and a strong jus.
