Vindemio's vineyard was founded on the precepts of its terroir and environment, in islands, in order to protect the ecosystem and the complex balance. The fauna and flora live in perfect symbiosis on the plots. On the outskirts of the plots, century-old trees, flower beds and streams protect the plots, like a plant dome that drives away violent winds and keeps the heat away. They are also a screen in front of the neighboring plots.

Presentation
At an altitude of 400 meters, at the foot of Mont Ventoux, the first terroir of 8 hectares, in the commune of Mormoiron, has both earth and sky at its heart. In the extreme west of the appellation, in Saint-Hippolyte-le-Graveyron, mirroring the first terroir, facing the Dentelles de Montmirail and Mont Ventoux, 4 hectares flourish in the tranquility of a micro-climate, protected from the wind and extreme temperatures.
Terroir
Terra means "earth" in Latin. A source of life for the vines, which draw their geological riches and strength from it, the soil is the essence of a terroir. At a height of 150 metres, at the foot of the Dentelles de Montmirail and in the shelter of Mont Ventoux, the Saint-Hippolyte-le-Graveyron vineyard enjoys the sun's rays from morning to night. On these 4 hectares surrounded by oak, cherry and cypress trees, the grapes are delicately harvested by hand, amidst cornflowers and thistles.

Tasting
Terra means "earth" in Latin. Source of life for the vine, which draws its geological wealth and strength from it, the soil is the essence of a terroir. At a height of 150m, at the foot of the Dentelles de Montmirail and in the shelter of the Mont Ventoux, the plot enjoys the sunlight from morning to evening. On these 4 hectares surrounded by oaks, cherry trees and cypresses, the manual harvest is done with delicacy, in the middle of blueberries and thistles. Terra expresses itself with beautiful spicy notes, aromas of red and black fruits and a nice acidity.
Food pairings
Enjoy it with poultry roasted with Provençal herbs, duck glazed with lavender honey and pommes grenaille, or a savoury crumble of courgettes, goat's cheese and lardons.
