The reds are powerful and generous, with notes of ripe fruit, garrigue, and spices. The whites impress with their freshness and minerality. A must-visit address for anyone seeking the intensity and authenticity of Minervois wines.

Terroir

Le Blanc d’Eulalie is produced in the Languedoc region, on the stony terroir of Château Sainte Eulalie’s vineyard. The south-facing vines, rooted in very stony clay-limestone soils, benefit from generous sunlight and an altitude of around 250 m, offering grapes that are perfectly exposed and naturally balanced.

In the vineyard

The vineyard stretches across well-exposed terraces, where the Sauvignon Blanc vines enjoy ideal conditions for slow ripening and the development of a rich aromatic profile. Vineyard practices are respectful of soil life and vine health, with the aim of producing healthy, expressive grapes that best reflect their terroir.

Harvest

Harvesting is carried out mechanically, ensuring a quick and efficient pick at optimal ripeness. This method helps to preserve the freshness and aromatic precision typical of Sauvignon Blanc.

Winemaking

After grape reception, the fruit undergoes direct pressing. Fermentation takes place at a low temperature (≈ 15 °C) to retain Sauvignon’s vibrant primary aromas. Malolactic fermentation is not performed, preserving the wine’s natural liveliness and crisp tension.

Ageing

The wine is aged exclusively in stainless steel tanks, allowing the fruit’s purity and the variety’s refreshing character to fully shine.
