Presentation
The Vignoble de Pauline is a young family estate rooted in the winemaking history of Burgundy. In 2021, Pauline took over the vineyards of her maternal grandparents, located in Saint-Romain and Auxey-Duresses, at the heart of the Côte de Beaune. Drawing on this legacy passed down with passion, she brings new life to the land with energy and precision, offering a modern and sensitive interpretation of Burgundy wines.
The estate covers a few carefully selected hectares, including old vines planted in the 1970s. Each plot is farmed organically, with a deep respect for biodiversity and soil health. This committed approach aims to express the unique identity of each terroir through elegant, precise, and vibrant wines.
A standout anecdote about the estate is that Pauline’s very first commercial vintage, in 2022, was vinified at Domaine Truchetet, where she benefits from exceptional technical and familial support. This strong connection between generations and estates gives her wines a distinctive character, at once personal and ambitious, marking the promising beginning of a domaine to watch.
Location
Saint-Romain Rouge Le Marsain comes from vineyards located on the hillsides of Saint-Romain, west of the Côte de Beaune. Nestled between limestone cliffs and unspoilt valleys, these high-altitude vineyards benefit from a cooler climate that encourages the slow and even ripening of Pinot Noir. These ideal conditions produce wines combining freshness, elegance and remarkable aromatic intensity.
Terroir
The vineyards are planted on clay-limestone soils rich in limestone scree. This distinctive terroir gives Pinot Noir an elegant expression, characterised by freshness, fine tannins and vibrant minerality. The balance between limestone and clay creates wines of precision, harmony and refined structure.
In the vineyard
The vineyard is certified organic and cultivated with careful attention to soil vitality and plant balance. No herbicides are used, the soils are tilled manually or mechanically depending on conditions, and grass cover is managed to support microbial life. Treatments rely on copper, sulfur and herbal preparations. The vines are short-pruned, and leaf thinning is carried out to promote air circulation around the grape clusters. This precise, site-specific approach results in healthy, expressive fruit and preserves the character of the plot.
Harvest
The grapes are harvested at optimal ripeness and carefully sorted to retain only the finest fruit. This meticulous selection guarantees outstanding grape quality and provides the ideal foundation for crafting elegant, terroir-driven wines.
Winemaking
Berries are transferred by gravity into temperature-controlled stainless steel vats. Fermentation begins naturally without added yeasts, and maceration lasts 17 to 20 days with gentle punch-downs and light pump-overs. Extraction is carefully managed to respect the finesse of Pinot Noir.
Ageing
The wine is then aged for 12 months in French oak barrels, with only a small proportion of new oak, adding complexity and structure while allowing the fruit to remain at the forefront.
