Terroir
Originating from a rigorous selection of plots, the Ventoux Abbayes Rouge notably comes from the Clos de l'Annonciation, a south-facing plot nestled at over 400 meters above sea level in the locality known as "La Font de Pertus." This vineyard with a steep slope benefits from ideal sunshine and a marked temperature range, conducive to the slow and complete ripening of the Syrah. The poor, well-drained soil and careful vine management enable the natural concentration and pure expression of the grape variety to be achieved.
Harvest
The grapes are harvested manually at dawn, rigorously sorted in the vineyard, then transported in crates to preserve their integrity. A second selection is carried out in the cellar on a sorting table. Only perfectly ripe and healthy bunches are retained.
Winemaking
After scraping and light crushing, fermentation takes place in small tanks at controlled temperature. Macerations are long in order to gently extract color, structure, and complexity.

Tasting
This exceptional red Ventoux seduces with the precision of its aromatic expression and the depth of its texture. The nose opens with aromas of black cherry, candied olive, and dark chocolate, lifted by warm spices like cinnamon, clove, and a hint of black pepper. On the palate, the material is dense, without heaviness, supported by a beautiful tannic structure perfectly integrated. Designed for aging, this red Ventoux will reveal all its complexity over the years. It can be enjoyed now after decanting, but will reach its peak between 2028 and 2035.
Food pairings
With its depth and silky structure, the Ventoux Abbayes Rouge reveals itself with flavorful dishes. It pairs perfectly with aged ribeye steak, roasted beetroot with a touch of balsamic vinegar, or even pulled pork with mild spices.
