Terroir
Coming from the heart of the Savennières appellation, "Sables & Schistes" accurately translates the meeting between two emblematic soil types of the region: brown schists, which bring structure and verticality, and sands, which offer finesse and aromatic brightness. This Loire terroir, cultivated in organic agriculture, reveals here all the mineral tension and vibrant energy of Chenin.
Harvest
The grapes are harvested by hand, in several passes, to keep only the ripest berries.
Winemaking
Direct and slow pressing, almost without racking. Settling is done only on the drained juices. The must is then divided between 400-liter barrels, earthenware amphorae, and small tanks, where fermentation and aging take place naturally over 18 months, without exogenous yeast or oenological input except for a measured dose of volcanic sulfur.
Varietal
Chenin ou chenin blanc : 100%
Serving
At 10-12°C. To be consumed within 3 to 5 years following the vintage.
Tasting
A nose of citrus and white-fleshed fruits, with subtly smoky notes. The palate, straight and precise, closes with a clear saline tension — a profile of pure freshness, without detour.
Food pairings
Seafood (oysters, shellfish), to meet the salty tension without contradicting it. Simply grilled white fish, the smoky note of the wine finding a direct echo. Fresh goat cheese, a canonical Loire Valley pairing that extends the liveliness on the palate. Roasted poultry with citrus, to pick up the lemony profile of the nose without weighing down the whole.
