Presentation

Domaine De Blayac, located in Languedoc, passionately cultivates traditional grape varieties such as Grenache, Syrah, and Carignan. Its clay-limestone terroir and Mediterranean climate offer ideal conditions for producing powerful and balanced wines. Working in sustainable viticulture, the estate favors environmentally friendly viticulture and manual harvesting, allowing for rigorous selection of grapes. Precise vinification reveals generous wines with aromas of ripe fruits, spices, and garrigue. The reds from the estate stand out for their beautiful structure and persistence on the palate, while the rarer whites are distinguished by their freshness and elegance. An estate that perfectly embodies the soul of Languedoc wines.

Location

This wine draws its identity from the Minervois terroir, with clay-limestone soils scattered with rounded pebbles that provide excellent drainage and lend minerality to the wine. The Mediterranean climate, influenced by the Tramontane wind, promotes optimal ripening and balance.

In the vineyard

Viticulture: Sustainable practices, soil respect, and environmentally conscious farming.
Yields: Moderate, ensuring aromatic concentration.

Harvest

Manual harvesting ensures precise selection of ripe, healthy grapes.

Winemaking

After manual harvest and sorting, traditional maceration takes place in temperature-controlled stainless steel tanks over 2 to 3 weeks. Extraction is carefully managed through pump-overs and cap punching to obtain ripe, silky tannins.

Ageing

Aged mainly in stainless steel or concrete vats, with approximately 30% aged in demi-muids. This brings added structure and complexity without overshadowing the fruit.

Tasting

This Minervois red from Domaine de Blayac captivates with its deep ruby hue and expressive bouquet of ripe black fruits, garrigue herbs, and sweet spices. The palate is round and generous, offering supple texture and fine tannins balanced by a subtle freshness. Flavors of blackberry, liquorice, and black pepper carry through to a persistent, Mediterranean-tinged finish.

Food pairings

This cuvée pairs beautifully with characterful cuisine: slow-cooked lamb shoulder, beef tagine with olives, or spiced duck breast. It also complements vegetarian dishes such as Provençal vegetable tian or ratatouille with herbs, and pairs perfectly with a wedge of aged ewe’s milk cheese.
