Domaine La Gardette - AOP Ventoux Rouge 2019

The owner, François LARGAUD, is part of the new generation at Demazet La Cave Canteperdrix. At 37 he manages a large vineyard of approximately 35 hectares (86.5 acres) in a single plot according to the principles of reasoned agriculture (less treatment and more working of the soil).

The vines are implanted around the village of Mazan, at an altitude situated between 200 and 250 metres. The wines benefit from a preserved terroir and exceptional biodiversity.

The climate is Mediterranean, with very hot summers and quite cool nights toward the end of the summer season due to the proximity of Mount Ventoux. This ensures that the wine achieves full maturity whilst also retaining a pleasant vivacity.

Nature of the soils: clay-limestone and marl soil.
In the vineyard
Average age of the vines: 40 years.
Winemaking
The varietals are processed separately, fermentation at controlled temperature. Rather long maceration period (3 weeks minimum) with pump-over and rack and return before release. Malolactic fermentation followed by decanting.
Ageing
Maturing in concrete vats.

Serving
Ideal serving temperature: from 16°C to 18°C.
Tasting
Purple red colour. Intense nose yielding aromas of black fruit and violets with a hint of liquorice. The mouthfeel is full-bodied with unctuous tannins leading on to a mildly spicy final.
