Champagne Gounel-Lassalle is located in the Montagne de Reims, in the 1er Cru of Chigny-les-Roses. The vineyard was founded in 1870, and was taken over by 4th generation Arnaud Gounel in the 2000s, with his wife Sophie Lassalle, who later joined him in 2016. In the cooperative until 2018, when they built their own cellar. They now run 5 hectares together, mainly planted with Pinot Meunier!

This cuvée expresses the aura of the estate, the entire vineyard and the character of the three grape varieties. This is the flagship of the Champagne house, expressing their spirit : free, adventurous and sending a message of the singularity of their heritage.

Tasting
Fine and lively bubbles, straw gold color.
Delicate notes : honeysuckle, apricot, blackcurrant, buttercup, soft chalk, acacia, apple-almond, pear-quince. Fresh aromas of raspberries and citrus is accented by honey, hazelnut and gingerbread. The attack is graceful and fresh; with a nod to rich and plump
fruits. Finish is persistent, rich and salty. This is a fresh and earthy wine.

Pumpkin soup and scallop, roasted cod fillet and parsnip purée, filet mignon of veal with reduced morel sauce, beef and shiitake cassolette, brie cheese from Meaux.
