Presentation
Domaine de la Métairie d’Alon, a property of Abbotts & Delaunay winery, is a 25-hectare estate planted with Pinot Noir and Chardonnay vines, located in a mountainous area around the village of Magrie, between Limoux and Roquetaillade, in the Languedoc’s Haute Vallée de l’Aude. It is composed of exceptional terroirs devoted to the production of high-end Pinot Noir and Chardonnay wines, crafted from organically grown, handpicked grapes.
The “Single Vineyard” wines that are selected from our best plots reflect the intrinsic character of their terroir.
Terroir
“Les Graves” refers to the name of the plot the grapes for this wine come from. It is located in a cool, narrow gully on steep, west-facing slopes at an altitude of 250 m. The vineyard is managed in accordance with both organic and Burgundian growing methods, and the calcareous clay soil is very stony, which lends the wine its minerality. This is an ideal location for producing a remarkable Pinot Noir rosé that is mineral, elegant and intense.
Winemaking
The grapes are handpicked and collected in perforated crates. When they arrive at the winery, the whole clusters are pressed immediately in a small pneumatic press. The initial and final juices, which are the roughest, are pulled so that only the finest juices from the second pressing are retained. They then undergo cold settling for 24 hours, without any addition of sulfites. Fermentation takes places in stainless steel tanks to preserve freshness. The wine is then aged in stainless steel for a short period of time — just a few months — to preserve all of its elegance before being bottled at the end of winter.

Tasting
Beautiful pink colour with bluish nuances. The first nose is redolent of citrus (lemon, Corsican clementine), which evolve toward elegant floral notes (orange blossom). Round, rich, delectable start to the palate after which the wine takes on all its finesse, boasting pleasing tautness reminiscent of citrus fruits and the development of a mineral profile (flint). The finish is exceptionally long, and carried even further by the delicate bitterness of grapefruit and a hint of anise. This is a grand Pinot Noir rosé that is elegant, fine and boasts remarkable depth.
Food pairings
Serve at 10°C with tapas, spring vegetables, Mediterranean cuisine, shellfish (grilled lobster, saffron prawns, braised scallops), grilled fish or red tuna tartare, and even duck with sweet spices.
