The vintage

Strong character, expressive and generous in the mouth... the Vintage 2015 boasts opulence, mineral freshness and aromatic richness. 
A vintage already considered as exceptional by wine professionals.

Situation

The soil consists of: red sand-clay, pebble soils containing limestone rocks with red sand-clay from the plain and a reddy-brown silty clay soil covered in schistose rocks.

Terroir

The vineyard is located in a mythical area of Provence known as the Golden Triangle which can be found at the western end of the Permian Depression, bordered in the south by the reliefs of the Massif des Maures and to the north by the limestone plateaux of the central Var region. The climate in this area benefits from the influence of the Mediteranean Sea as well as from the more continental climate further inland to the west.

Winemaking

The Syrah, Mourvèdre and Carignan Noir grape are harvested according to their maturity. They are destemmed and lightly crushed before being transferred to different tanks for a cold, light soaking of 48 hours followed by a traditional fermentation in stainless-steel tanks.
We use heat-regulated stainless-steel tanks to control the fermentation temperature, which has to be maintained between 26 and 28 degrees. 
The fermentation lasts between 10 to 15 days followed by post-fermentation vatting of about 10 days. 
A small part of the wine (10-15%) is matured in oak barrels of 2-3 years to give to the wine more complexity and slightly wooden notes.
